Fixings

2 kg fish (ideally Sultan Ibrahim)

Salt

3 tbsp cumin

2 head garlic

Oil for frying

Flour for covering

Technique

Rub cleaned angle with salt and leave aside for 2 hours.

Squash garlic and blend it with cumin.

Stuff angle with garlic blend and leave aside for 60 minutes.

Move angle in flour then profound sear till brilliant. Present with fries/prepared potatoes and green serving of mixed greens
